Lapsang Souchong is one of the most famous black teas produced in the Fujian province of China, and probably the oldest. Its distinctive smoky aroma is obtained by drying tea leaves on bundles of smoked pine, still carried out in an artisanal manner today. The taste is strong and full-bodied, slightly tannic. Perfect with cheese, smoked salmon, cold meats, it also becomes a surprise ingredient in risottos, sauces and original roasts.
Preparation suggestion: 2/3 g for 200 mL of mineral water at 90°C. Infusion time: 3/4 minutes.
