Chinese white tea yin zhen, literally “silver needles”, is one of the rarest and most precious teas in the world. Produced in Fujian in a very limited area, it consists only of the perfect apical buds from early spring, still covered with soft white down. Formerly reserved for the emperor, of whom the phoenix was one of the symbols, white tea gives a very clear and smooth infusion, with a flowery aroma and a lingering sweet aftertaste.
Preparation suggestion: 2/3 g for 200 mL of mineral water at 70/75°C. Infusion time: 4/5 minutes.
